Ingredients
- 2 red onions
- 2 brown onions
- 2 white onions
- 1 leek
- 2 litres of chicken stock
- Sliced toast and grated cheese to serve
Method
- Peel and slice all onions and the leek.
- Sauté in a pan until lightly browned.
- Transfer to a pot with the chicken stock and bring to the boil.
- Serve with a slice of toast and grated cheese on top.
Garlic Soup
Garlic is one of nature's most potent antimicrobial herbs, packed with allicin — a compound well known for its immune-boosting and infection-fighting properties. This rich, creamy soup is a powerhouse remedy for flu season.
Ingredients
- 1 kg garlic (organic is best)
- 2 brown onions
- A little butter for sautéing
- 1½ – 2 litres chicken stock
- A little fresh cream or blue vein cheese to finish (optional)
- Fresh peppermint leaves to chew afterwards (optional — great for the breath!)
Method
- Peel and dice the garlic and onions.
- Sauté in a little butter until lightly browned.
- Add the chicken stock, bring to the boil, then simmer for 5 minutes.
- Blend until smooth.
- Stir through a little fresh cream or crumbled blue vein cheese if desired.
